Meet the Ranchers

Mahan Ranch is owned and operated by Weldon and Jennifer Mahan.  The Mahans are fifth generation Texans and have a long family heritage of livestock ranches in the Central Texas area. In 2013, Weldon made the decision to start raising Kuroge Washu cattle not only for its flavor but for the health benefits as well. Since 2013, only a few other select ranchers have made the same type of commitiment due to the higher costs associated with raising Kuroge Washu since their life cycle is almost double that of a normal steer. Mahan Wagyu cattle are produced on a 2,500 acre Mahan Land & Cattle, Inc. Ranch near Silverton, TX and the Palo Duro Canyon.

What is Beef Marbling Score (BMS)?

Beef Marbling Score or BMS is a grading system for the quality and marbling of beef. The score value ranges from 3-12 with a score of 12 being the highest and typically found in Japanese A5 Wagyu beef. Our 100% Full-blood Wagyu ranges between 7-9 BMS.

What's the difference between Japanese Wagyu & American Wagyu?

Japanese Wagyu is a breed of cattle (there are 4 types) from Japan that is known for its tenderness, flavor, and texture. From 1975 to 1997, Japan allowed a small number of these type of cattle to be exported. During this time American cattle farmers imported this breed of cattle, mainly the Japanese Black breed (Kuroge Washu) and were certified and regulated to raise full-blood wagyu cattle. The Wagyu cattle that has been raised in the U.S. is known as American Wagyu. Some cattle farmers have cross-bred other breeds of cattle with Wagyu and have kept the Wagyu label. However, the quality and flavor are inferior to the full-blood Wagyu. Ranch & Trail does not cross-breed and uses similar cattle raising techniques to provide you with the highest-quality beef.
